Chicken Sandwich Filler

 A delicious way to use up leftover cooked chicken. I called it a sandwich filler but it is delicious in jacket potatoes or on its own with a side salad. Ingredients 400 g leftover cooked chicken 4 tbsp mayonnaise 1 tbsp mustard 1 spring onion, finely sliced pinch cayenne pepper handful of finely chopped flat leaf parsley lime juice to taste 1 small red chilli, chopped (optional) Method 1.  Break up chicken and stir together with mayonnaise, mustard, spring onion, cayenne pepper and parsley. Season with salt & pepper, add lime juice according to taste. Enjoy

Tomato Toast

A quick and easy lunch or snack, tomatoes on warm toast is simply delicious. Ready in less than 5 minutes this will be on the table and in hungry tummies in no time. Ideal and quickly prepared when someone comes in late after a night out feeling peckish this healthy snack can be whipped up in a couple of minutes to satisfy the hunger pangs. Ingredients 2 slices bread of your choice 2 small or 1 large tomato, sliced 1-2 tsp fresh rosemary, finely chopped flaky sea salt to season Method 1.  Toast the bread to your preferred darkness. Spread toast with butter. 2.  Assemble tomato slices onto spread toast, sprinkle with chopped rosemary. Season with freshly ground pepper and flaky sea salt.

Classic Egg Salad

Just the way dad liked it!!.  A simple classic that contains no fancy twists or exotic ingredients, just basic egg salad. This was my dad's all time favourite when it came to sandwich fillings, no other ingredients but eggs, mayonnaise, salt and pepper. Sometimes the simple classics are the best and that's what he loved, plain old bog standard egg mayonnaise. Great as a sandwich or jacket potato filling, as a dip with crackers, egg mayonnaise is a quick and simple dish to whip up. Allow eggs to come to room temperature before cooking. Don't over boil the eggs, you don't want them rubbery textured. Ingredients 6 hard boiled eggs 4 tbsp mayonnaise pinch of salt pinch of white pepper Method 1.  Roughly chop eggs into a medium bowl while they are still warm, add mayonnaise, salt and pepper. Tomato, Mozzarella and Basil Sandwich

A simple yet tasty summery sandwich. The taste of tomatoes, mozzarella and fresh basil is a great combination. Perfect as a summer lunch or on cooler days with some hot soup, they are also ideal for school lunches or picnics. All you need is your favourite crusty bread, some slices of fresh mozzarella and tomatoes, season with salt and pepper, top with chopped fresh basil and a drizzle of olive oil....YUM Enjoy

Avocado Egg Salad

Combine a classic egg salad with creamy healthy avocado and you get a delicious nutritious salad that can be enjoyed as a sandwich filling or eaten just on its own. Ingredients 1 avocado, finely diced 2 hard boiled eggs, roughly chopped,  2 tbsp red onion, diced 1 tbsp alfalfa sprouts (optional) 2 tbsp mayonnaise 1 tsp lemon juice Method Combine all ingredients in a bowl. Season with salt and pepper to taste. This would also makes delicious jacket potato filling.

Honey Mustard Ham and Alfalfa Sandwich

A simple healthy, filling sandwich for lunch or snack. Alfalfa sprouts contain a concentrated amount of certain vitamins and minerals such as calcium, vitamin K and vitamin C. They are also a good source of the B-vitamin complex such as folate. Ingredients 2 slices bread alfalfa sprouts 4 slices honey mustard ham slices of red onion wholegrain mustard Spread one slice of bread with margarine or butter, top with a handful of alfalfa sprouts, slices of red onion, ham and wholegrain mustard. Season with freshly ground pepper. Enjoy

Cheese Salad Sandwich

No recipe needed for this one, just a delicious sarnie full of tasty cheese and various salad items. Ingredients 2 slice wholegrain bread 4 thin slices of cheese 4 leaf salad mix sliced tomato sliced cucumber sliced spring onion salad cream salt and pepper  Method 1.  Spread one slice of bread with margarine or butter. 2.  Arrange salad leaves, cheese, tomato, cucumber and spring onion on buttered bread.  Season with salt and pepper. Spread salad cream over other slice of bread, sandwich together and enjoy.

Crispy Bacon and Minted Pea Toast

  I made this the other day for my lunch, it was delicious, I did the bacon in the air fryer, recipe  here  and made a minted pea spread, recipe  here I toasted a slice of mixed grain bread, it would also be delicious on chargrilled bruschetta or sourdough bread ( heat a chargrill pan over medium-high heat, brush both sides of bread with olive oil, then cook for 2 minutes each side or until golden and charred). Use sliced ham, shredded chicken or crumbled feta if you are not keen on bacon. Spread a layer of the minted pea, top with crispy bacon or topping of your preference. Enjoy.

Chicken, Capsicum and Carrot Salad Filling

I had some leftover rotisserie chicken, capsicum and grated carrot from last nights tea so I made myself a sandwich filling for today's lunch, and enjoyed it on a poppy seed bagel.   It can also be enjoyed as a filling for a jacket potato.  These are just rough amounts, you can adjust to suit your taste. Ingredients 1 cup cooked chicken, chopped 1/4 red capsicum, chopped 2 tbsp finely grated carrot 1/2 tsp fresh continental parsley, chopped 1-2 tbsp mayonnaise splash lemon juice salt & pepper to season Method 1.  Combine all ingredients in a bowl, adjust and season to taste. Enjoy as a salad, sandwich filling or stuffed into a jacket potato. Enjoy.

Corned Beef & Brown Sauce Sandwich

Scott listens to Steve Wright on BBC radio 2 through an app while he is driving or at work because he doesn't like the radio stations here. After listening to one particular show he came home and said he heard on the radio that someone was going to have lunch of a corned beef & brown sauce sandwich and said it sounded delicious. I had seen tinned corned beef in the supermarket but wasn't too sure if it would be anything like the corned beef we get back home, so never bothered to buy it. Next day while grocery shopping I bought a tin of corned beef and some HP brown sauce (no other brown sauce can compete) and made it for his lunch. We were pleasantly surprised that the corned beef was every bit as good as the ones in the UK, looked the same as well as tasted the same. Slice up some corned beef to your preferred thickness, butter some bread and sandwich between a thick dollop of brown sauce. Not in the least healthy but a delicious treat non the less 😋
