Trail Mix Bliss Balls

These bliss balls are a healthier snack for kids and adults to enjoy without the guilt of sugary treats. Cerys loves trail mix so I thought these would make a nice change for her lunch box snack. Really quick and easy to make, they can be frozen then popped into the lunch box so they are still nice and cool to enjoy on a hot day. Ingredients 1 cup rolled oats 2 cups trail mix 1 tbsp chia seeds 1 1/2 tbsp cocoa powder 2 tbsp honey 1 tbsp maple syrup Method 1.  Place all ingredients into a food processor, blend until mixture resembles a sticky, textured crumb. 2.  Using your hands firmly press and shape into balls. Place on a tray lined with baking paper. Refrigerate until set. Enjoy.

No Bake Oat and Peanut Butter Energy Balls

These little balls of deliciousness offer a healthier option to cookies. Packed with protein and fibre these should keep hunger pangs at bay until meal time. They are also perfect for school lunch bags. You can also try adding some chia seeds or flax seeds or for an extra treat add some raisins or chocolate chips . Ingredients 1 1/2 cups quick oats 1/2 cup smooth peanut butter 1/4 cup honey 20 g unsalted peanuts, crushed Method 1.  In a medium bowl mix first 3 ingredients until combined well. 2.  Roll into balls then roll around in the crushed peanuts to coat, you can also use shredded coconut if you prefer. Place them on a wax paper lined baking tray. 3.  Refrigerate for about an hour. Store in an airtight container. Try rolling them in desiccated coconut or crushed mixed nuts. 

Goji Berry and Date Bliss Balls

Goji berries are full of vitamins and minerals as well as antioxidants and amino acids which make for a super healthy snack that improves depression, anxiety and sleep among others.  Dates are high in potassium and fibre. A delicious healthy snack the whole family will enjoy. Bliss balls are a great way to get kids eating nutritious seeds and grains, they are also delicious and kids love the sweetness. Ideal for lunch boxes and after school treats. Let the kids get involved in making these easy peasy snacks, they always enjoy helping mum in the kitchen. Ingredients 1 cup pitted dates 2/3 cup raw cashews 1/2 cup Goji berries 1 tbsp Chia seeds 1/3 cup cacao powder 2 tbsp honey  Method 1.  Soak dates in warm water for 20 minutes to soften.
