Lorne sausage, sometimes also called square sausage is a traditional Scottish food usually served up as part of a cooked breakfast or in a bap with brown sauce.
Ingredients
680g pork mince
220g beef mince
200g dried breadcrumbs
1 tsp ground nutmeg
1 tsp salt
1 tsp ground black pepper
2 tsp dried mixed herbs
150ml water
Method
1. Place breadcrumbs, nutmeg, salt and pepper in a bowl, mix to combine.
2. Put both minces in another bowl and mix together. Add seasoned breadcrumbs and mix through.
3. Add water and mix until thoroughly combined.
4. Line a loaf tin with cling wrap, leaving enough to cover the meat.
5.. Add mixture and press down to make sure it is compressed and even. cover the top of the meat with the remaining cling wrap. Refrigerate over night.
6. Cut into slices. Cook in a frying pan over a medium heat for approx 3 minutes each side or until cooked through.
