Day Six...20th August, Our Last Day

Our last day. We got up at 8 am, showered and had breakfast. Our activity today was the 40 minute scenic flight over the he Great Barrier Reef.

We arrived at Daintree air services at 9.15am, we joined the other 5 passengers in the waiting room to wait for the pilot to return with the previous passengers. During that time, we had a safety information briefing by one of the other pilots. We put on our safety vests around our waist. (See separate post

Our pilot, Brayden, came in and introduced himself, then lead us to the aircraft. We entered the plane and took our seats, I was behind the pilot, we all had window seats.

Once in the air, we headed out over various parts of the barrier reef, it was spectacular, the colour of the ocean was amazing.

The pilot was very informative, he gave us a commentary about The Great Barrier Reef's eco system, he also pointed out the natural landmarks. We flew over Green island, then over Oyster and Arlington Reef, Vlasoff Reef, Michaelmas Reef, Upolu Cay, Cape Grafton, False Cape, Double Island and Palm Cove before landing at Cairns airport, coming in from the direction of Yorkeys knob.

We disembarked and the pilot asked if anyone wanted photos beside the plane, which we all took him up on, that was our adventure done for the day.

We then headed out to Port Douglas again, Scott wanted to have lunch at Cafe Fresq for one last time. We arrived in Port Douglas at 12pm, it was extremely busy as it was Sunday, and market day.

We strolled through the market before wandering around the sea front taking photos.

We then went back to the love lock heart so I could get more photos.

We returned to the market and bought a fresh drinking coconut, the guy used a huge machete to open the coconuts!

Once we had finished the coconut water, we return to the stall and the man cut it open and scooped out the coconut flesh so we could eat it.

We walked back through the town to Cafe Fresq for lunch, we ordered different things this time round, I had 12 hour beef brisket Rogan Josh taco, Scott had the same but on a sandwich, we also ordered a side of hand cut chips.

We had a walk around town to let our lunch settle 😄 before heading back on the hour drive to Cairns, where we passed some flames at the side of the road which we were surprised that people were just nonchalantly driving past the flames and there were no fire engines attending it!

We got some packing done before having a very light tea 😉

Aussie Pie Floater

With Australia day fast approaching, I had to share this Aussie icon. The pie floater is a meat pie submerged in thick pea soup, the pies are traditionally turned upside down sitting or sometimes submerged in the pea soup. The first time I had ever heard of this was while watching an episode of Billy Connolly's Australian tour. He was doing a show in Adelaide and indulged in one of these south Aussie icons. We tried a similar thing called a tiger pie from Harry's Cafe de Wheels on the Sydney harbour, the Tiger is a meat pie served with scoop of mash a scoop of mushy peas and a scoop of gravy, it was really delicious.  A pie floater put simply is a meat pie on top of or covered in green pea soup with a choice of sauce squirted on top, the usual being ketchup, brown sauce, mint sauce, gravy or bbq sauce, some people also enjoy vinegar over their floater, I suppose the options can be endless, whatever 'floats' your pie!!. I searched a few variou...

Hickory-Honey Ham...Christmas With The Kranks

I got this Christmas movie cookbook during our 2022 holiday to LA see  here  and I still haven't made anything from it, so for our Christmas in July, I thought I would try the Hickory-Honey ham from the movie Christmas with The Kranks. Scenes from the movie where Nora is running towards the last ham in the store, only to be outsmarted by an elderly lady. I managed to get a couple of reduced shoulder hams from woolies back in May so this gave me an excuse to try a recipe from the book. We also got some Hickory smoking chips for the BBQ. It is a ham that has been smoked over Hickory wood chips for several hours, served with a honey gravy, not out of a tin which it is in the movie. Ingredients 8 cups hickory or other hardwood chips 2 large aluminum foil pans 1 (4kg) fully cooked  bone in ham 1/4 cup salted butter 1 shallot, minced 1/3 cup honey 1/4 cup dark brown sugar 1/4 cup apple cider vinegar 1 tbsp balsamic vinegar 1 tbsp wholegrain mustard 1 tsp ground ginger 1/...
