A quick and easy dinner idea, add cooked prawns or cooked chicken or simply an egg cooked to your preference.
Enjoy as a main or side dish.
Ingredients
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1/2 tsp smoked paprika
300g frozen mixed veg, thawed, drained
450g microwave rice
2-3 tbsp soy sauce
1/2 tbsp sweet chilli sauce
4 eggs, cooked to your preference
Method
1. Heat oil over in non-stick wok or frying pan over a medium heat. Add onions, cook until almost translucent, add garlic and paprika, cook for a further 1-2 minutes
2. Add mixed vegetables, cover and cook for 2-3 minutes. Add rice, soy sauce and chilli sauce, cook for 1-2 minutes or until rice is heated through. Season with salt and pepper, toss to combine.
3. Spoon into shallow serving bowls and top with a fried or poached egg.
