Ingredients
1 cup pitted dates
2/3 cup raw cashews
1/2 cup Goji berries
1 tbsp Chia seeds
1/3 cup cacao powder
2 tbsp honey
Method
1. Soak dates in warm water for 20 minutes to soften. Drain, reserving the soaking liquid. This can be used in smoothies or desserts.
2. Place dates, cashews, goji berries into a food processor, process until mixture resembles crumbs.
3. Add cacao and honey and blend. If mixture seems to dry, add a little of the reserved date liquid and blend, continue adding the liquid until the desired consistency is reached. The mixture should be moist enough to roll into balls.
