Apple Crumble

My family LOVE apple crumble, it is so easy and quick to make, not to mention tasty, great as a winter warmer served with warm custard or on warmer days serve with cream or ice cream. Ingredients APPLE MIXTURE.. 4 apples, peeled, cored and quartered 1 Tbsp lemon juice 1 Tbsp caster sugar 1/4 Tsp cinnamon (optional) 1/4 cup water Method 1.  Preheat oven at 180° C. 2.  Combine above ingredients in a pan. Cook over a low-med heat, stirring occasionally until apples are slightly softened. 3.  Drain off most of the liquid then place apples into a pie dish and distribute evenly. Ingredients  CRUMBLE TOPPING.. 1/2 cup plain flour 1/4 cup wholemeal flour 1/2 cup rolled oats 75 g cold butter, chopped 1/3 cup caster sugar Method 1.  Combine dry ingredients in a large bowl, add butter. Saturday Lunch

On Saturday, Scott and I went for lunch at Jackman and McRoss in Battery Point, seriously this place has so many delicious goodies to choose from. I ordered the Goats cheese, sun dried tomato, basil and caramelised onion tart, it was delicious, I was a bit apprehensive about the goats cheese as I had never tried it before but this tart was devine, the cheese was lovely and soft and went well with the tomato and onion, would definately have it again. Scott had the Chorizo, caramelised onion and gruyere cheese pastry which came with a side of tomato sauce, this too was a hit, buttery pastry and delicious filling, yum.

Sofa So Good

Herb and Garlic Mozzarella Sticks

Ingredients 300 g mozzarella cheese block (approx) 1 egg 60 g plain flour 60 ml milk 70 g herb & garlic breadcrumbs (use plain breadcrumbs if preferred) 2 - 3 cups oil for frying Method 1.  Beat the egg and milk together in a shallow dish. Place flour in another dish and season with salt and pepper. Place the breadcrumbs in a third dish. 2.  Slice mozzarella block into 8 approx 2-3 cm sticks. Dip each stick into egg mix, then into flour, then back into egg, making sure the cheese is evenly coated with each dip. Finally dredge each stick in breadcrumbs. Place coated cheese sticks onto a plate and into the freezer, freeze for at least 2 hours. 3.  Heat oil in a wok or deep pan, over a medium heat. Once hot, but not too hot, fry 3-4 sticks at a time until golden brown. Serve immediately with your choice of dipping sauce.

Overnight stay in Launceston

A couple of weekends ago, Scott and I decided to go to Launceston for an overnight stay. After arriving and checking into our hotel room, we drove to The Cataract Gorge where we took a leisurely stroll around the gardens, over the suspension bridge, checking out the wildlife that resides here. We hopped on the Gorge scenic chairlift which spans 457 metres with amazing views of this ancient rock gorge and South Esk River, it is believed to be the longest single span chairlift in the world. Before returning to our hotel we enjoyed refreshments at the cafe. We went to the Tram Bar Lounge for our tea. Next morning we ate breakfast at the hotel, it was a buffet with lot's of choice from fruits and cereal to full cooked breakfast.
