Homemade Double Shot Latte Iced Coffee

Cerys LOVES iced coffee, I seem to be constantly buying it for her so I decided to try it myself. As we are not plain coffee drinkers, I bought a box of Moccona double shot latte, blended with ice, milk and sugar and the results was a huge thumbs up!! 👍👍 Add more or less sugar depending on your personal taste, same goes with the milk. I found that half full fat and half semi skim created a delicious creamy iced coffee. I intend to try various coffee flavours for more variety but this one was a massive success. Ingredients 2-3 ice cubes 15 g sachet double shot Latte 150 ml full fat milk 150 ml semi skim milk 2-3 tsp sugar (optional) Method Put  ice cubes into a blender, add the sachet of coffee, milk and sugar. Blitz until combined and frothy. Add more ice if preferred. Enjoy.

Superfood Pancakes

We were watching an episode of Four in a bed the other evening when one of the B & B hosts was describing what ingredients they used in their breakfast superfood pancakes, they sounded delicious and the other guests raved about them at breakfast so I thought I would give them a try, as I didn't have the recipe or measurements of the ingredients I just had to wing it. I substituted flour for flaxseed meal, normal milk for coconut milk, added some rolled oats, chia seeds and manuka honey and went about making in the usual pancake recipe fashion. As flaxseed browns quicker than regular flour, just keep an eye that they don't over brown. They mixture seemed a bit wet and they didn't spread out as evenly round as normal pancake batter, giving them a more rustic look to them, they were also quite difficult to flip without cracking so I didn't give out much hope that they would be eaten, but fortunately I was mistaken, they were delicious and firmed up...

Mixed Seed Bread

A delicious tasty and healthy bread which can be enjoyed plain or topped with your favourite filling. This is one of Cerys' favourite breads. Gluten-free and packed with protein, this bread goes well with smashed avocado, egg, sliced tomato with balsamic vinegar and fresh herbs, warm with soup or your favourite nut butter. I used natural seed mix with pine nuts as there is always a packet of these in the cupboard because Cerys eats them straight from the packet, you can also use flaxseeds or nut and seed mix. Ingredients 250 g almond meal 1/2 cup natural seed mix 2 tbsp chia seeds 3 tsp baking powder 1 tsp sea-salt flakes 150 ml warm water 3 tbsp extra virgin olive oil 3 eggs, lightly beaten Method 1.  Preheat oven top 180°C fan-forced. Quick & Easy Nut Milk

Any kind of nut or even seed butter will work as long as it has no added oils. I used my homemade cashew butter see recipe  here A delicious refreshing drink or use in cereals, smoothies, tea or coffee, anything that requires milk really. Ingredients 1.5-2 tbsp nut butter 450 ml water 1/2 tsp vanilla (optional) 1 date (optional) Method Place all ingredients in a bullet blender, blend for 30-40 seconds then enjoy.

Avocado Soup

A delicious creamy soup with a delicate tang that is equally yummy served warm or chilled. Ingredients 1 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, finely chopped 1 bay leaf 1 Litre vegetable stock 2 ripe avocados, flesh chopped 1/2 cup creme fraiche lemon juice to taste Method 1.  Heat oil in a saucepan over a medium-low heat. Add onion and garlic and cook, stirring, for 10 minutes or until softened.  2.  Add bay leaf and stock, bring to the boil, then cool slightly. Remove bay leaf. Add avocado, season to taste, then puree in a blender until smooth, add creme fraiche and blitz until combined. 3.  Stir in the lemon juice, then either return to a low heat to warm through, or refrigerate until chilled. If enjoying warm, warm gently on a low heat.
