A great way to use up over-ripe avocado and banana.
Ingredients
1 3/4 cups wholemeal plain flour
1 1/2 tsp bicarbonate of soda
1/2 tsp fine sea salt
1 over-ripe avocado
1 large over-ripe banana
2 tbsp melted butter
1 tsp vanilla extract
2 tbsp honey
2 eggs
Method
1. Preheat oven to 175°C. Line a 12 cup muffin tin with muffin liners.
2. In a large bowl, combine flour, bicarb and salt.
3. Using a food processor or blender, add avocado, banana, butter, vanilla, honey and eggs, pulse until smooth.
4. Using a spatula, gently mix the avocado mixture into the flour mixture to form a batter. Fill muffin liners 3/4 way up.
5. Bake for 18-20 minutes or until toothpick inserted into centre comes out clean.
