Another recipe from the Christmas movie cookbook. This one is from the movie Love Actually.
Ingredients
3 large eggs
1 1/2 cups whole milk
1 1/2 cups plain flour
1 tbsp minced fresh chives
1 tsp minced fresh rosemary
1/2 tsp fine sea salt
1/4 cup melted butter, oil or fat
Method
1. In a medium bowl, combine eggs and milk, whisking until well blended. Whisk in the flour, chives, rosemary and salt. Let stand for at least 30 minutes or until the mixture comes to room temperature.
2. Place the oven rack to just above the centre. Preheat oven to 230°C fan.
3. Place a 12 cup popover or muffin pan in the oven and preheat for 5 minutes.
4. Carefully remove the pan from the oven and brush the fat evenly in the centre and along the sides.
5. Stir batter if separated, and pour it evenly among the preheated cups.
6. Bake for 10 minutes. Reduce oven temp to 160°C fan and bake for 20 minutes more or until golden brown and puffed. Serve immediately.
I must admit, none of us were really taken with this recipe, they were very dense and lacked flavour, I won't make them this way again.
