Here we have another recipe from The Christmas Movie Cookbook. This time a Christmas breakfast recipe. This recipe is from a Christmas movie I have never heard of... A Very Harold & Kumar Christmas.
Ingredients
1 1/2 cups plain flour
2 tbsp light brown sugar
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp fine sea salt
2 large eggs, lightly beaten
1 cup whole milk
1/2 cup unsalted butter, melted
1 med granny smith apple,
peeled & grated
Method
1. In a large bowl, combine flour, brown sugar, baking powder, cinnamon and salt.
2. In a separate bowl, whisk eggs, milk and butter. Stir in the apple.
3. Preheat a Belgian waffle iron.
4. Fold egg mixture into flour mixture, stirring just until combined.
5. If necessary, lightly grease waffle iron. Spoon 1/3 cup batter into waffle iron. Cook for 4-5 minutes until golden brown. Transfer to a plate, cover with foil. Repeat with remaining batter.
Cinnamon-Butter-Maple-Syrup
Ingredients
1/2 cup pure maple syrup
1/4 cup unsalted butter
1/2 to 1 tsp ground cinnamon
Method
1. In a small saucepan, combine maple syrup, butter & cinnamon. Cook over a medium heat, stirring constantly, until butter melts and mixture is smooth. Serve over waffles.
