21st August...Travelling Back to Hobart

After we had breakfast, we finished packing and put the cases in the car, we then returned the room key before heading back to the car hire to drop the car back.



We got the transfer bus to the airport and checked in. Our flight to Brisbane left Cairns at 11.50am.





We arrived at Brisbane airport at 1.40pm, 17 minutes early.

We were supposed to have 1 hour wait at Brisbane airport but the flight was delayed, so instead of the 3.05pm departure, we left at 3.50pm. 



We had planned to get the kids Krispy Kreme doughnuts from Sydney but with the delay we got them at Brisbane, which was just as well, we only had time to run from one plane to the next at Sydney.




I bought a kookies 'n kreme, vanilla maxibon, lotus biscoff ring with a swirl of biscoff creme and an original glazed ring.



The plane to Sydney took off at 3.50pm.

We landed in Sydney at 5.10pm and our flight to Hobart was departing at 5.58pm. We went to check in and was advised that our seats had been changed to the emergency exit seats, which meant more leg room!, there was a bit of a delay so we didn't take off until 6.15pm.

We arrived in Hobart at 7.50pm, disembarked and collected our suitcase, which incredibly, was one of the first off!, that has never happened to us before, so it was a pleasant surprise. We got on the transfer bus to the carpark, then drove home.


The kids were very pleased to see us as was Hamish. We sat and chatted for a while before they went to bed.

Corned Beef Stovies

  We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces. Cut corned beef into small chunks. Add to potatoes, season with salt and pepper. Stir until well combined and corned beef has brea...
