These started off as macaroons, but Dorothy, as thrifty as she is practical, found a few mini chocolate chips in the cupboard and decided "What the heck!". These will last for days, if you keep them hidden!. Try popping one in the freezer for five minutes before savouring it-a real treat!.

I have been really enjoying recreating the Golden Girls recipes, and Jodie is delighted with the abundance of sweet treats!.
A delicious chewy meringue with chocolate chips and coconut, a great afternoon treat, enjoy as Rose would do, with a glass of cold milk, dunk if you dare! 😉
Ingredients
2 1/2 cups unsweetened coconut flakes
1/3 cup mini chocolate chips
2 egg whites
pinch salt
3 tbsp sugar
3 tbsp sweetened condensed milk
1/2 tsp vanilla extract
Method
1. Preheat oven to 180°C (160°C fan forced).
2. Spread half (1 1/4 cups) of the coconut on a baking sheet and bake until the coconut is evenly and lightly browned, about 5 minutes. Stir coconut once about halfway through to make sure it browns evenly. Turn the oven temperature down to 150°C (130°C fan forced). Cool coconut and baking sheet completely.
3. Stir the toasted coconut and untoasted coconut and the chocolate chips in a medium bowl. Beat the egg whites and salt in a small bowl. When the whites are starting to look foamy, start adding the sugar gradually. Beat until the meringue holds soft peaks. Stir in the condensed milk and vanilla, then gently stir the meringue mixture into the coconut mixture.
4. Line the cooled baking sheet with greaseproof paper. Drop the batter by mounded teaspoons, making irregular-looking mounds (better than flat). Bake until the meringue is browned and a cluster feels light when you pick it up, about 35 minutes. Cool 5 minutes, then transfer the clusters to a wire cooling rack and cool completely. Now the serious choice to be made: leave the clusters out, uncovered, for a chewy texture, or store in a covered container for a more crumbly texture. Either way, they won't last long.
