A super easy tomato soup using pantry staples, no cooking involved.
Knocked up in minutes, this soup is ideal if you are in a rush or have an unexpected dinner guest. (double ingredients if needed)
Just three main ingredients, tinned tomatoes, I used diced tomatoes with onion, garlic and basil but any kind of tinned tomatoes works well, coconut milk and garlic. Be prepared for a tangy garlicky kick!
Ingredients
400g can tomatoes
200g coconut milk
1 clove garlic, crushed
salt & pepper to season
Method
1. Place tomatoes, coconut milk and garlic in a food processor, blend until smooth, season with salt & pepper.
2. Transfer mixture to a pan and heat on the stove until desired temperature. Check if more seasoning is needed. Top with a spoonful of chickpeas if you have them. (optional)
