Lemon Chicken And Chickpea Soup

A delicious light and tangy soup full of goodness, perfect for a winter's day or when you need a little pick me up. An unusual combination but it works! Chock full of vitamins, minerals, protein and much more, this will be a recipe that you will continue to go back to. Ingredients 2 tbsp olive oil 1 yellow onion, diced 6 clove garlic, crushed 1 large lemon, zested, juiced 1 tbsp fresh Rosemary, chopped 6 cups chicken stock 250g tin chickpeas, drained 1 tsp salt 1 tsp black pepper 1 tsp chili flakes 200g leftover cooked chicken Method 1.  Heat a large soup pot over a medium heat, add olive oil. Once hot add onion, saute for 2-3 minutes or until softened. Add garlic, saute for another minute. Add lemon zest, saute for another 2-3 minutes, stirring. 2. Air Fryer Tofu Nuggets

  Jodie brought home a packet of tofu which has been taking up space in the freezer for about 2 months, so I finally decided it was time to do something with it. Cerys suggested tofu "chicken" nuggets in the air fryer so we thought we would give it a go. Tofu is high in protein and contains all of the essential amino acids your body needs. It also provides fats, carbs, and a wide variety of vitamins and minerals. This comes with only 70 calories, which makes tofu a highly nutrient-dense food. ( information sourced  here  ) Originally we only used a couple of grinds of salt but that wasn't enough, the actual tofu was certainly lacking flavour, although everyone ate them, including Scott!!!. Super Quick & Easy Tomato Soup

  A super easy tomato soup using pantry staples, no cooking involved. Knocked up in minutes, this soup is ideal if you are in a rush or have an unexpected dinner guest. (double ingredients if needed) Just three main ingredients, tinned tomatoes, I used diced tomatoes with onion, garlic and basil but any kind of tinned tomatoes works well, coconut milk and garlic. Be prepared for a tangy garlicky kick! Ingredients 400g can tomatoes 200g coconut milk 1 clove garlic, crushed salt & pepper to season Method 1.  Place tomatoes, coconut milk and garlic in a food processor, blend until smooth, season with salt & pepper. 2.  Transfer mixture to a pan and heat on the stove until desired temperature. Check if more seasoning is needed. Top with a spoonful of chickpeas if you have them. (optional) Serve with a toastie or crusty bread.

It was pouring rain all day so we couldn't get anything done outside, we decided to start on the inside of the windows. We started painting the cream frames white, we also bought white roller blinds to replace the cream vertical blinds that have been there since we bought the house, I think the previous owners had a thing for cream! 😖😂  First coat of white going on, it will need at least a couple more coats to get rid of the paint streaks. We are also replacing the vertical blinds downstairs with a night & day roller blind that gives privacy through the day. We also bought some tinted window film, we already have this on the upstairs window but not the downstairs so that will be going on there to match the rest of the windows. Lemon Water With Sea Salt

Facetiming mum the other evening, she was telling me about this lemon water that she had been making and drinking through the day, sounded deliciously refreshing so she gave me the recipe to share here on the blog. It is a great pick me up rich in vitamin C which helps boost your immune system and assists in fighting off colds and flu. It also helps boost energy levels, improving your mood and helps reduce anxiety, stress and depression. The sea salt helps neutralize the lemon, making it less acidic, sea salt combined with lemon can help reduce cellular toxicity by pulling waste from your cells. Ingredients 1 litre alkaline water 1 lemon 1 tsp sea salt or himalayan salt Method Pour water into a pitcher, cut lemon in half, squeeze one half into the water, slice other half and add to pitcher along with 1 tsp salt, mix well, leave in refrigerator overnight.

Sperhuven Krispies

This recipe is one of Rose's ancient Scandinavian concoctions from The Golden Girls cookbook. A yummy chocolaty krispie treat with a cheesecake icing topping, adorned with mini marshmallows and chocolate chips. Enjoy with a glass of cold milk. St Olaf's legendary Sperhuven Krispies- according to Rose this is a treat that tastes like "cheesecake, fresh strawberries, and chocolate ice cream", but according to Blanche, "they smell god awful". The Golden Girls Inspired Pizza

I have been   making a few recipes from The Golden Girls cookbook recently and one recipe I was surprised isn't in the book is pizza. Now, the girls (golden) love sharing a pizza dinner almost as much as they enjoy sharing a cheesecake, so Cerys and I thought we would try to replicate a golden girls pizza. They tend to go for pepperoni pizza as Sophia is Italian and LOVES pepperoni, she also loves peppers (capsicum) and garlic, she is often seen devouring a veal and pepper sandwich. There are a number of hilarious pizza quotes throughout the seven series of The Golden Girls. I didn't use specific ingredient measurements, I just went with what I thought would taste good, for the dried herbs I just sprinkled some all over the base.
