Air Fryer Tofu Nuggets

 
Jodie brought home a packet of tofu which has been taking up space in the freezer for about 2 months, so I finally decided it was time to do something with it.


Cerys suggested tofu "chicken" nuggets in the air fryer so we thought we would give it a go. Tofu is high in protein and contains all of the essential amino acids your body needs. It also provides fats, carbs, and a wide variety of vitamins and minerals. This comes with only 70 calories, which makes tofu a highly nutrient-dense food. ( information sourced here )


Originally we only used a couple of grinds of salt but that wasn't enough, the actual tofu was certainly lacking flavour, although everyone ate them, including Scott!!!. We added more salt to the 2nd batch and they were much better.


Ingredients

 1 block firm or extra firm tofu

For the batter

3/4 cup water
1/2 cup plain flour
1 tsp garlic powder
1 tsp onion powder
1 tsp hot paprika
1 tsp salt
grind of pepper

For the breadcrumbs

1 cup panko breadcrumbs

Method

1.  Remove tofu from packaging, drain, place tofu block between 2 pieces of kitchen paper, then placer something clean and heavy on top, leave for 15-20 minutes.

2.  Squeeze excess liquid out by squeezing between your hands.

3.  Mix flour, water, garlic powder, onion powder, paprika, salt & pepper in a medium sized bowl to form a paste.

4.  Place panko breadcrumbs in a separate shallow bowl.

5.  Tear the tofu into bite sized pieces. Dip each piece of tofu in the batter, shake off excess, then roll in the breadcrumbs.

6.  Spray your air fryer basket with olive oil, place the breaded tofu bites into the basket. Repeat batter and breading until all tofu is coated and in the air fryer basket.

7.  Air fry the nuggets at 200°C for 5 minutes, then shake and turn the tofu. Air fry for an additional 5-8 minutes until golden and crispy.

Serve with dipping sauce of your choice.

Hickory-Honey Ham...Christmas With The Kranks

  I got this Christmas movie cookbook during our 2022 holiday to LA see  here  and I still haven't made anything from it, so for our Christmas in July, I thought I would try the Hickory-Honey ham from the movie Christmas with The Kranks. Scenes from the movie where Nora is running towards the last ham in the store, only to be outsmarted by an elderly lady. I managed to get a couple of reduced shoulder hams from woolies back in May so this gave me an excuse to try a recipe from the book. We also got some Hickory smoking chips for the BBQ. It is a ham that has been smoked over Hickory wood chips for several hours, served with a honey gravy, not out of a tin which it is in the movie. Corned Beef Stovies

  We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces.
