A delicious moist and healthy snack that is quick and easy to make.
Cerys loves these kinds of loaf, she is not keen on vegetables so this way at least she is getting the vegetable goodness in a yummy slice.
Ingredients
1/3 cup canola oil
1/2 cup honey
2 eggs
1/2 cup milk (your choice)
1 tsp bicarbonate of soda
1 tsp ground cinnamon
2 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground nutmeg
1 1/2 cup grated zucchini
1 3/4 cups wholemeal flour
Method
1. Preheat oven to 170°C. Grease a 9" x 5" loaf tin.
2. In a large bowl add oil and honey, whisk to combine. Add eggs and beat well.
3. Add milk, bicarbonate of soda, salt & nutmeg, whisk to blend. Squeeze excess moisture out of zucchini, then stir zucchini into batter. Add flour, stir until just combined.
4. Pour batter into loaf tin. Bake for 45 - 50 minutes or until a skewer inserted into the middle comes out clean. Leave to cool in pan on a wire rack.
