These tasty and refreshing cucumber and mint sandwiches are perfect for a hot summers day lunch, filled with thinly sliced cucumber and finely chopped fresh mint they are also perfect for a tea party.
There is no need for specific ingredient amounts I just make as much or as little as I need. I find that using a soft white bread makes them deliciously delicate but other types bread can be used.
Ingredients
sliced white bread
thinly sliced cucumber rounds
fresh mint, finely chopped
spreadable butter
salt and pepper to taste
Method
1. Peel and thinly slice cucumber. Place the slices between 2 sheets of paper towels in a colander. Allow liquid to drain for around 10 minutes. Pat dry.
2. Spread slices of bread with softened butter. Arrange 2 layers of cucumber on the bottom slice of bread, top with a sprinkle of finely chopped mint, season with salt and pepper, top with another slice of buttered bread. Press lightly with palm of hand.
3. Cut off crust using a sharp knife then cut in half and then into quarters.
Best served and enjoyed immediately, preferably with a cup of tea!
