Scott came home the other day with a bagful of freshly picked eating apples. After consuming some over a couple of days, I was still left with quite a lot.
The kids enjoy a dessert for Sunday dinner so I decided to use the apples to make an apple sponge pudding but had unfortunately ran out of flour.
As I didn't have the time to go buy more I thought I would try it with a cupcake box mix, it turned out delicious and the sponge was really thick and moist.
All I did was follow the packet directions using the ingredients shown and pour it on top of the cooked apples.
I used Green's cupcake box mix and made it up with the ingredients and instructions that were on the back of the packet.
Ingredients
8 apples, peeled, cored, sliced
1 cinnamon stick
1-2 tbsp caster sugar
2 tbsp water
1 pkt cupcake mix
2 eggs
1/2 cup milk
60 g softened butter
Method
1. Preheat oven to 160°C, (Fan forced). Grease an ovenproof dish
2. Combine apple, cinnamon, sugar and water in a pan over a medium heat, cover and bring to the boil. Reduce heat to low and simmer, partly covered until apples are just tender. Remove from heat and keep warm, discard cinnamon stick.
3. Meanwhile mix cupcake batter according to manufacturers instructions.
4. Spoon apple mixture into ovenproof dish and pour cake batter over the hot apple mixture.
5. Bake for 30-35 minutes or until golden and sponge has risen and springs back when lightly touched.
Serve warm with ice cream, custard or if you want to be extra decadent serve with whipped or pouring cream.
