Fried rice is a firm favourite in our house, I try to make different varieties by adding vegetables, meats etc. This version used leftover ham on the bone, I also had a tin of pineapple so I used some of that and added some cooked prawns for an extra special treat.
It was a huge hit, hubby went to work next day with the leftovers for lunch.
Ingredients
1 onion, diced
1 garlic clove, crushed
1 carrot, peeled, chopped
100 g peas
1 red capsicum, diced
60 g mushrooms, sliced
100 g cherry tomatoes, quartered
1 spring onion, sliced
1 chicken stock cube
150 g diced ham
150 g cooked prawns
150 g diced pineapple
2 cups cooked rice
1 tbsp soy sauce
2 eggs, beaten
Method
1. Heat oil in a wok over a medium-high heat. Add onions and saute for 4 minutes, add garlic and saute for a further 2 minutes until onions are translucent.
2. Add the vegetables, cook for 2-3 minutes. Add crushed stock cube and rice, mix to combine. Add ham, prawns and pineapple.
3. Heat some butter or oil in a small frying pan. Add beaten egg and cook gently until set. Cut into thin slices.
4. Stir egg and soy sauce through the rice mixture. Serve hot.
