A delicious combination of creamy goats cheese and tangy tomato, makes this a flavoursome lunch or dinner.
Ingredients
2 sheets ready made shortcrust pastry, thawed
4 eggs
1 cup milk
2 Tbsp cream
1 onion, chopped
3 tomatoes, thickly sliced
30 g baby spinach
1 clove garlic, crushed
50 g goats cheese
50 g grated cheddar cheese
1/2 Tsp Dijon mustard
1 Tsp dried basil
Method
1. Preheat oven to 200°C. Line a quiche dish with pastry and blind bake pastry according to packet instructions. Remove from oven.
2. Heat some oil in a frying pan over a medium heat, saute onions and garlic until softened. Remove to a plate.
3. Whisk together eggs, milk, cream, basil, cheddar cheese and mustard, season with salt and pepper.
4. Arrange tomatoes, onions and spinach over pastry base. Pour over egg mixture, add chunks of goats cheese, sprinkle with some grated cheddar. Bake for 35-40 minutes until golden.
Serve warm or cold with salad.
