I made a Pavlova yesterday for my birthday tea, so I had some egg yolks left over, I didn't want to waste them so I made a cake using the egg yolks, it is a very quick and easy cake to make and tastes delicious.
Ingredients
4 egg yolks
2 1/2 Tbsp hot water
125 g caster sugar
125 g self raising flour
1/8 Tsp salt
1/2 Tsp vanilla essence
2 Tbsp milk
Method
1. Preheat oven to 170° C.
2. Beat the egg yolks with the hot water until creamy consistency. Gradually add the sugar, continuing to beat until thick and pale in colour. Add salt and vanilla essence and beat for another 30 seconds.
3. Fold in the flour and milk alternately until fully combined. Pour into a greased, lined 8 inch baking tin, bake for 30 minutes until baked through, test with a metal skewer, if it comes out clean the cake is ready. Cool in the tin on a cooling rack.
