Avocado, Mint and Choc Chip Ice Cream

This is a delicious creamy Ice cream, sneaking in Avocado, (shh, don't tell the kids) LOL, adds some good fats to the dessert and trust me, they will never know that it has been added, also the Avocado gives it a natural mint colour so there is no need to add green food colouring! Ingredients 2 ripe Avocados (not over ripe) 600 ml Thickened cream 500 ml Full fat milk 1 Tsp peppermint extract 1 Tsp Vanilla extract 1 Cup chocolate chips 1 Cup granulated sugar 1/2 Tsp Salt Method 1.  In a medium bowl combine milk and sugar, hand whisk until sugar has dissolved, approx 1-2 mins. Stir in cream, peppermint extract, vanilla extract and salt. 2. Cut avocados in half, take out stone and scoop flesh out into a blender, add the cream mixture and blend until smooth, this may need to be done in stages depending on the size of your blender, once there are no lumps of avocado left pour mixture into an Ice cream maker and freeze according to manufacturers ins...

Books I am Reading Just Now

Cold Granite By Stuart MacBride I have only just started reading this book and I am hooked already. Scott is now on to Stuart MacBride's fifth novel in the Logan McRae series, he is not a reader as such, especially books but he absolutely loves these, finds them entertaining, enthralling and because they are set in Aberdeen, Scotland, where we originate from, he can relate to the places, streets etc that are mentioned in the story, that is one of the reasons I decided to start reading them, it takes you on a trip down memory lane, not because of the gruesome story lines but because of all the familiarity of the locations and dialect used. Beautiful Inside And Out...Audrey Hepburn

I love Audrey Hepburn, she truly is one of life's most inspirational people. Not only a beautiful face, but a beautiful soul too. She retired from acting to dedicate herself and all her time to being a humanitarian, Audrey was appointed Goodwill Ambassador of UNICEF. Travelling to the poorest countries, bringing national attention to the needs of starving, sick children throughout the world. Her envied slender figure was a result from being malnourished during adolescence. Audrey lived life to the full, going out of her way to help others. Audrey Hepburn went down in history not only as a great actress, but also as a genuinely caring and sincere person, striving to make the world a better place. Different, diverse and very much honest, a true lady.

Snowy Weekend

It has been really cold here in Tassie, with quite a lot of snowfall over the weekend, snow was falling at sea level and starting to settle 150 metres above sea level, which made for a picturesque winter wonderland with lots of people out playing in the snow and capturing as much memories as they could. Here are a few photos we took this weekend.

Grandma's Visit 2016

The girls paternal Grandma, Margaret, visited from Scotland, arriving on 27th April for 3 weeks. This was her first visit on her own since Granda suddenly passed away on 29th November 2015, and at 81 years old was very brave of her and very much appreciated by us all here in the land down under. Arriving Greeting her off the plane at the airport. Margaret and her late husband George had made the trip 3 times before to spend Christmas with us, first time from 10th - 27th December 2010. Dec 2010 Second time was from 21st Dec 2011 - 9th January 2012. Dec 2011 Third time was 21st Dec 2012 - 8th January 2013, which was great as we got to spend Christmas and New Year with them both times. Dec 2012 Enjoying the sunshine on day of arrival.
