I made this for Cerys' Christmas lunch as she is a vegetarian, she really enjoyed it, I will certainly make it again, and take more photo's as I am making it, what, with it being Christmas day I didn't have much time to take pics!.
Ingredients
1 whole cauliflower
2 tbsp olive oil
1 tbsp harissa paste
1 tbsp Moroccan seasoning
Method
1. Bring a large pan of water to the boil. Trim outer leaves from cauliflower, keeping the inner leaves intact (optional), trim base so cauliflower sits flat. Place cauliflower into boiling water, stem side up. Reduce heat and simmer for 15 minutes.
2. Meanwhile, preheat oven to 200°C/180°C fan forced. Line a large baking tray with greaseproof paper. In a small bowl, combine oil, harissa paste and Moroccan seasoning.
3. Carefully transfer cauliflower into tray stem side down. Brush cauliflower with the mixture. Bake for 45 minutes or until golden brown and cooked through. Cut into steak slices. Serve immediately.
