I had some mixed nuts, sultanas and raisins leftover from Christmas and I didn't want to make another cake, so these small guys sprung to mind.
I used to love making rock cakes as a child (obviously minus the nuts) and haven't made them in a while so figured these would be perfect to add the fruit and nut mix.
Ingredients
200g self raising flour
pinch of salt
100g cold butter, cubed
80g sugar
100g mixed nuts, fruit
1 egg
milk to mix
Method
1. Preheat oven to 200°C, 180°C Fan. Grease a baking tray.
2. Mix the flour and salt, rub in the butter. Stir in sugar, mixed nuts and fruit.
3. Mix to a stiff dough with the eggs and milk, gradually adding milk until the desired consistency.
4. Place in rough heaps on a greased baking tray. Bake for 15-20 minutes.
