Rotisserie Chicken Salad

  A delicious and easy way to use up leftover rotisserie chicken. Instead of mayonnaise try sour cream, plain Greek yogurt or cream cheese. Ingredients 200g shredded rotisserie chicken 1/4 red onion, finely diced 1/2 cup mayonnaise 1/4 tsp dried mint 1/2 tbsp Dijon mustard 1/2 tbsp lemon juice salt & pepper to season Method Combine all ingredients in a mixing bowl. Serve with baked potatoes, crackers, bread or on top of a salad. Enjoy

Cheering Jodie Up

  Jodie has been having a tough time lately at work, people and circumstances has left her feeling down, anxious and overwhelmed, she just hasn't been herself of late. Cerys came to me this morning to say that she was going to give Jodie a present to cheer her up a little, she had bought her a special edition Pirates of the Caribbean Dog pop vinyl when she spotted it in Zing back in April, it was originally going to be for her birthday but with all the stress Jodie has been under at work she decided that she should get it now in the hope that a little something would help her feel a little bit better and appreciated.  Jodie loves anything and everything to do with The Pirates of the Caribbean movies so she will absolutely adore this little guy 💗🐶 She wrote her a little note and stuck it to the gift and left it on her bed so she will get it when she comes home from work. She got a wonderful surprise when she got home and appreciated it very much.

My Birthday

I can't believe it's been a whole year since my last birthday!, where does time go? The kids were working so they sent me messages, the one above is from Darren. From Jodie. Cerys. I received some beautiful gifts, these are from the kids 😍💗 I got the most stunning pink handbag from Scott 💗💖 I made seafood chowder using homemade prawn stock for tea. We watched a couple of episodes of my most favourite program ever... The Golden Girls  With Hamish sat by my feet as always 🐶🐶 Very true 💗 And just like that, it's over with for another year, 3 birthday's down, 2 to go not including Hamish. STAY GOLDEN!

Weather Warning

Last night we got severe weather warnings about heavy rainfall and damaging winds for today. Scott and I were sitting with a cup of tea this morning when we heard an almighty crash, we couldn't figure out where it came from but when he checked behind the gallery wall downstairs beside the kids rooms a huge chunk of the bank had fallen down putting strain on the wall, this happened before during our flood (see  here ) and Scott braced the clay rock with an old door amongst other things, but with all the rain again it loosened another part of it, causing cracks and bulges on the wall. We removed the pictures and Scott set about bracing the wall with any bits of wood he could get his hands on. The water was coming in from the bank at the back of our house. Causing huge cracks in the bank and in turn allowing it to collapse against the hallway wall. There is also a leak in the cabana roof! We plan to remove part of the wall and dig away some of the loose bank then add a supporting wall...
