A delicious and easy way to use up leftover rotisserie chicken. Instead of mayonnaise try sour cream, plain Greek yogurt or cream cheese. Ingredients 200g shredded rotisserie chicken 1/4 red onion, finely diced 1/2 cup mayonnaise 1/4 tsp dried mint 1/2 tbsp Dijon mustard 1/2 tbsp lemon juice salt & pepper to season Method Combine all ingredients in a mixing bowl.
