Ingredients
For the muffins:
2 cups S.R flour, sifted
3/4 cup caster sugar
finely grated rind of 1 lemon
2 eggs
1 cup milk
3/4 cup vanilla yoghurt
30 g melted butter
1 1/2 tsp lemon juice
Lemon drizzle topping:
1/3 cup lemon juice
1/3 cup caster sugar
Method
1. Preheat oven to 180°C fan. Grease a 6 hole jumbo muffin tin.
2. Mix flour and sugar together in a medium bowl.
3. Beat eggs, milk, yoghurt, melted butter, lemon rind and lemon juice together. Add to dry ingredients. Stir until just combined.
4. Divide the batter equally into the prepared muffin tin and bake for 15-20 minutes or until they spring back in the middle when lightly pressed.
5. Remove from oven and spoon the lemon drizzle over muffins until it is finished. Leave muffins in tin for 2-3 minutes before transferring to cool on a wire rack.
To make lemon drizzle topping:
In a small bowl, mix lemon juice and sugar together well, stirring until sugar has dissolved.
