Prawns cook very quickly so be careful not to over cook the prawns, otherwise they will be rubbery. When cooked they should be opaque white and light pink.
Prawns make a great quick and easy starter and these prawn skewers are easily picked up and eaten straight off the skewer.
Ingredients
1 garlic clove, crushed
zest of 1/2 lime
1 tbsp olive oil
3/4 tbsp sriracha sauce
1/2 tsp salt
1 tbsp brown sugar
juice from 1/2 lime
500 g raw prawns
Method
1. In a large bowl whisk together garlic, lime zest, olive oil, sriracha sauce, salt, sugar and lime juice until smooth and well combined.
2. Add prawns and mix well. Thread 4-5 prawns onto bamboo skewers that have been previously soaked in water.
