Cerys enjoys baking at the weekend. We were deciding what to bake on Sunday when Scott suggested rock cakes.
A firm favourite as a child this was to be the baking item of the day, I mean who doesn't enjoy a rock cake, these were a staple at the school bake sales, I think almost every mum made these and they were usually the first goodies to disappear!.
In between eating handful of currants I think the girls did a fab job at their first attempt of rock cakes. Easy and quick to make they will definitely be making these again.
Ingredients
200 g self raising flour
pinch of salt
100 g butter, room temp
100 g sugar
75 g currants
1 egg
milk to mix
Method
1. Preheat oven to 190°C. In a large bowl mix flour and salt. Rub in the butter until crumbly looking.
2. Stir in the sugar and currants.
3. Add the egg and a small amount of milk at a time, mixing to make a stiff dough.
3. Place in rough heaps on a lined baking tray.
4. Bake for 15-20 minutes or until golden brown.
