Jodie.....21 Already!!

It is hard to believe our first born daughter has turned 21!!, seriously it only seems like yesterday we took her home from the hospital. Below are some photos of the day. I baked and decorated a drizzle cake topped with some of her favourite goodies. Granda was also there to wish her a happy birthday 🌈🌈 That evening the 5 of us went out for a birthday meal at the Claremont Hotel to celebrate. Trying her luck at Keno...hopeless 😜 Jodie and Cerys had beer battered monk fish   I had the pork porterhouse with chilli plum sauce  Darren had chicken garlic prawn parmi   Scott had the mixed grill It was nice to round the day off with a meal out and no dishes afterwards!!   And last but by no means least...this old man turned 11 years old on the same day. 🙈 Happy birthday to these two cuties 🎉🐶👩

Creamy Potato and Pea Salad

A delicious creamy potato salad, ideal for a summer side dish. Ingredients 1 kg baby potatoes cut into chunks 1 cup frozen peas 1/2 cup mayonnaise 1 tbsp garlic aioli 1 tbsp Dijon mustard 1 tbsp apple cider vinegar 1 tsp dried dill or tarragon 1 tsp dried chives  1/2 tsp vegetable salt 1/4 cup chopped onion Method 1.  Bring potatoes in salted water to the boil. Reduce to a rolling simmer. Cook until tender. Drain, allow to cool. 2.  Cook peas according to packet directions. Drain, allow to cool. 3.  In a large bowl, combine mayonnaise, mustard, vinegar, dill, chives and vegetable salt. Stir in potatoes and onion until covered in the dressing. Chill in the fridge until ready to serve. Enjoy. 

Scott's Birthday

We didn't do anything special for Scott's birthday this year, Cerys made him a trifle for dessert which he was delighted with. Happy birthday fossil face 😝

Slow Cooker Curry Sausages

A mild and tasty sausage curry using a sachet mix making this a quick and easy dinner. While on the phone to Margaret a while back she told us that she had tried this Schwartz slow cooker packet mix and it was really nice, I asked her to take a packet out with her so we could try it. Instead of chicken I used sausages as that was what I had in the fridge, I also added 2 potatoes that I had in the fridge. I cut the sausages into chunks and browned them first. You can add more potatoes to make a one pot meal. I served mine with mashed potatoes, but rice or pasta would work. Ingredients 1 packet Schwartz slow cooker chicken curry mix 8 sausages cut into chunks 1 onion, diced 1 red capsicum, diced 2 small potatoes, quartered 400 g tin diced tomatoes Method 1.  Heat 1 tbsp oil in a frying pan over medium-high heat. Mango Chicken Curry

This recipe popped up on my facebook page the other day, it is from Taste.com.au. It looked and sounded delicious so I thought I would give it a try. Instead of using chicken thighs as suggested I used sliced chicken breast, it turned out amazing, light and fresh mango flavour with the mild taste of korma, it was an instant hit, I will definitely make this again. Scott and I usually tend to prefer spicy curries, Vindaloo, Rogan Josh, Madras etc so I wasn't sure how this very mild curry would go down with the family but it was a really nice refreshing change for a mid week dinner, one that was suitable for everyone to enjoy.
