Seedy Nutty Herby Crackers

A tasty homemade cracker that is perfect with dips or enjoyed on a cheeseboard with various cheeses, chutney, meat slices and fruit.



Parmesan can be added for a great tangy flavour. Various flavoured sea salt flakes can be added for seasoning, I used sea salt flakes with chilli and herbs.


Get the kids involved in making these, Cerys enjoyed eating what she had created.


Ingredients

1/2 cup natural almonds
1 cup seed mix with pine nuts
2 tbsp chia seeds
30 g Parmesan, grated (optional)
1/2 tsp dried oregano
1/2 tsp smoked paprika
3 tbsp olive oil
1 egg, lightly beaten
1/2 tsp baking powder
sea salt to season

Method

1. Preheat oven to 160°C fan forced.

2.  Place almonds, seed mix, chia, Parmesan ( if using), oregano and paprika into a food processor. Pulse until almonds are finely chopped.

3.  Add oil, egg and baking powder and pulse again until mixture comes together.

4.  Spoon half the mixture onto a sheet of baking paper and partially flatten into a rectangle shape. Top with another sheet of baking paper and using a rolling pin, roll mixture flat to about 4mm thick. Remove top sheet of baking paper and transfer the bottom sheet with mixture onto a baking tray. Repeat with remaining mixture. Season with sea salt flakes. Bake for 20 minutes or until golden. Cool completely in trays. Snap into crackers.

Corned Beef Stovies

  We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces.
