I made slow cooked pork shoulder in apple cider sauce for Sunday dinner and had some leftover to use for Monday's dinner. The pork was so tender, falling apart and the sauce was divine, so I decided to make pulled pork sliders with a side of coleslaw.
Messy to eat, but delicious 😋
Ingredients
250 g (approx) leftover pork, pulled
1 cup leftover gravy or chicken stock
1 Tbsp balsamic vinegar
1 1/2 Tbsp brown sugar
1/2 Tsp smoked paprika
1/2 Tsp ground paprika
2 Tsp Cajun seasoning
1/2 Tsp garlic powder
1 Tbsp dried fried shallots
4 brioche burger buns
coleslaw
Method
Combine all above ingredients in a pan and bring to a simmer over a medium heat. Cook until liquid reduces and thickens, approx 15-20 minutes. Cut buns in half and on pile the gooey tender pork, top with coleslaw.
