Usually made using leftover potatoes and vegetables bubble and squeak was a favourite of ours for next day's side dish using what was left from the Sunday roast or mum would fry it up and dad would take it to his work for lunch. Ahh the memories these types of dishes brings back!
As well as the usual veg I added onion, mushrooms and some grated Mozzerella cheese, this one also contains leftover skirlie.
I find that with these types of dishes don't really need specific quantities it is just a case of using up what ever is left from the night before dinner and seasoning to your own personal taste.
Method

Season and serve.
Chop 1/2 - 1 onion into smallish pieces, slice mushrooms. Heat some oil in a frying pan over a medium heat and fry onion and mushrooms until softened, add a pinch of garlic flakes. Slice cold cooked potatoes and chop cooked cabbage and carrots. Add to onion mix along with the skirile if using, Cook for 3-4 minutes or until heated through.

Season and serve.
