There was some cereal in the cupboard that the kids kept bypassing, I was about to throw it out but then decided to give this whole cereal milk Ice cream thing a go. I have seen various posts on cereal milk ice cream and thought what a great idea, who doesn't enjoy slurping the dregs of cereal flavoured milk from the bottom of their breakfast bowl!, it's got the best flavour. You can use any cereal of your choice, great for using unwanted cereals. I think next time I will gather all the last bits of cereal the kids always happen to leave at the bottom of the packets and make a mixed cereal milk ice cream 😋

Ingredients

4 cups cereal
3 cups whole milk
2 1/2 cups thickened cream
1 egg
3 egg yolks
1 cup granulated sugar
1 Tsp vanilla extract
1/4 Tsp salt


Method


1.  Put cereal in a bowl and pour in milk, allow to soak in the fridge for about 1 hour. Remove from fridge and strain the milk into another bowl. This should give you about 1 1/2 cups flavoured milk. Discard the cereal.


2.  Combine the flavoured milk, cream, vanilla and salt in a pan. Heat over a medium heat and bring to a gentle boil, stirring occasionally.

3. Whilst milk is heating, combine sugar, egg and egg yolks in a stand mixer bowl, beat until thickened and creamy

4. Take out 1 cup of the hot milk/cream mixture and setting the mixer to low speed gradually add it to the egg mixture, mix until fully incorporated.

5.  Transfer this mixture into the pan with the milk/cream mixture. Cook over a low heat, stirring constantly until thickened slightly, approx 2 minutes. Don't let it boil.

6. Transfer to a bowl and allow to cool at room temperature. Then refrigerate until completely cool, 1-2 hours.

7.  Once the custard is chilled, follow manufacturers instructions for your ice cream maker as to how to make the ice cream.



Transfer ice cream to an airtight container. The ice cream will be soft and creamy, if you prefer a firmer ice cream put it in the freezer for 2 hours. Remove from freezer 10 minutes prior to serving.

Hickory-Honey Ham...Christmas With The Kranks

  I got this Christmas movie cookbook during our 2022 holiday to LA see  here  and I still haven't made anything from it, so for our Christmas in July, I thought I would try the Hickory-Honey ham from the movie Christmas with The Kranks. Scenes from the movie where Nora is running towards the last ham in the store, only to be outsmarted by an elderly lady. I managed to get a couple of reduced shoulder hams from woolies back in May so this gave me an excuse to try a recipe from the book. We also got some Hickory smoking chips for the BBQ. It is a ham that has been smoked over Hickory wood chips for several hours, served with a honey gravy, not out of a tin which it is in the movie. Corned Beef Stovies

  We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces.
