Unicorn Layered No-bake Cheesecake with Choc Chip Base


As with almost every young girl just now, my youngest daughter is obsessed with all things Unicorn, from soft toys to Unicorn coloured clothing, anything that resembles the amazing pastel colour of Unicorns. 

I am intending doing a Unicorn colour theme for her birthday party in July, so I have been busy checking out pastel colour desserts and cakes, there is an abundance of variations on the internet. As my family LOVE cheesecake I thought I would practice with a Unicorn layered cheesecake to see how it turned out before making it on her big day.


Ingredients for base

200 g chocolate chip cookies
70 g unsalted butter, melted


Ingredients for filling

400 g cream cheese brought to room temp
400 ml thickened cream
75 g granulated sugar
1 1/2 Tsp vanilla essence
1 Tbsp lemon juice
pink, yellow, blue and lilac food colouring


Method

1.  Crush cookies into fine crumbs, mix in melted butter and stir to combine. Press the crumb mixture firmly into the base of an 8" spring form cake pan. 
Refrigerate whilst making the filling.


2.  Place cream cheese in a stand mixer bowl and beat until smooth. Add sugar and combine, then add thickened cream, lemon juice and vanilla essence, mix until smooth and slightly thickened.

3.  Divide the mixture evenly between 4 bowls, add a little food colouring to each bowl and mix to make 4 individual pastel shades.



4.  Spread one coloured mixture evenly over the biscuit base and return to freezer for 10-15 minutes, this prevents mixing of the layers. Continue to do this with each coloured layer. Once all layers are in place, freeze for 2-3 hours until fully set.


5.  When ready to serve remove from freezer and run a damp hot cloth around the tin, this will help to release the cheesecake. Add topping of you choice, I used pastel coloured fairy floss.







I am sure this will be a huge hit at her birthday party 👍

Hickory-Honey Ham...Christmas With The Kranks

  I got this Christmas movie cookbook during our 2022 holiday to LA see  here  and I still haven't made anything from it, so for our Christmas in July, I thought I would try the Hickory-Honey ham from the movie Christmas with The Kranks. Scenes from the movie where Nora is running towards the last ham in the store, only to be outsmarted by an elderly lady. I managed to get a couple of reduced shoulder hams from woolies back in May so this gave me an excuse to try a recipe from the book. We also got some Hickory smoking chips for the BBQ. It is a ham that has been smoked over Hickory wood chips for several hours, served with a honey gravy, not out of a tin which it is in the movie. Corned Beef Stovies

  We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces.
