Porridge isn't only for breakfast, it can also be for lunch or dinner, try a savoury porridge, it is delicious and tasty, making a healthy nutritious, filling meal.
Ingredients
50 g rolled porridge oats
30 g kale leaves, chopped
15 g spinach leaves
70 g mushrooms, sliced
1/2 Tsp fresh thyme leaves, chopped
1/2 Tsp crushed garlic
2 1/4 cups water
15 g Feta, crumbled, plus extra for garnish
1/2 - 1 Tbsp coconut oil
Method
1. Place oats in a pan with the water, stir and bring to boil. Reduce heat to low and simmer gently, stirring occasionally for 20 - 25 minutes or until oats are thick and creamy
2.. A few minutes before porridge is ready, add coconut oil to a large frying pan, heat on medium, cook mushrooms for 2 - 3 minutes or until golden, add garlic, cook for a further 30 seconds, add kale, spinach and thyme, cook, stirring for a further 2 minutes or until kale has wilted.
3. Add mushroom mix and feta to porridge, stir through, pour into a bowl and garnish with more feta.
