These fritters are delicious as an afternoon snack or a dessert, serve with ice cream or dipping sauce.
Ingredients
2 large apples
170 g plain flour
1/2 Tsp ground cinnamon
1 Tsp vanilla sugar
1 1/2 Tbsp sugar
1/4 Tsp baking powder
1/4 Tsp salt
1 egg
300 ml buttermilk
Oil for frying
Method
1. Sift dry ingredients together into a medium bowl, whisk the egg and buttermilk together in a jug, then gradually whisk the egg mixture into the flour mixture until just combined.
2. Peel apples and slice into even slices, approx 1/4 " thick, cut the core out of the slices, pat dry each slice with kitchen paper.
3. Pour 2-3 " oil in a heavy based deep frying pan or wok, heat over a medium heat. Test oil heat with a drop of batter, if it bubbles and rises quickly, the oil is hot enough.
4. Coat each slice in batter, shake off excess batter, then lower into the hot oil, add 3-4 slices at a time, fry for approx 3-4 minutes, turning occasionally to get even colour. Remove with tongs and set onto a dish lined with kitchen paper. Lightly dust with cinnamon sugar.
Serve immediately with ice cream or dipping sauce.
