Tropical Lemon Smoothie

Brighten up your day ! 🍋 This tangy, zesty smoothie is a great start to any morning. Lemons are an excellent source of vitamin C and limonins, which are antioxidants that are unique to lemons. Coconut water is rich in nutrients, containing five essential electrolytes, add to that other fruits, and you have a delicious, nutritious breakfast or pick me up to go. Ingredients 2 cups coconut water, I used cocobella coconut water Zest and juice from 1 & 1/2 lemons 100 g pineapple, fresh or tinned 100 g honey dew melon 2 bananas 1 Tbsp honey 5 Tbsp plain Greek yogurt Method 1.  Prepare fruit, removing skin, seeds etc. Put all ingredients together in a blender and blitz until smooth.

Stovies

Stovies is a Scottish dish based on potatoes. Recipes and ingredients vary widely, but always contain potatoes. Stovies is a dish intended to use left-over food. Ingredients 200 g - 300 g  left over lamb or beef 1.8 kg potatoes (suitable for mashing) 1 large onion, peeled and diced 1 large carrot, peeled and thinly sliced 300 ml beef stock 1 tbsp oil dash of gravy browning Method 1. Pre-heat oven to 190 degrees C.  2.  Roughly cut meat into bite size pieces. Heat oil in a large hob/oven proof casserole dish. Cook onions and carrot until softened, add the meat and season, brown meat for 1-2 minutes, making sure it doesn't stick to the base of the pot. 3.  Peel and thinly slice the potatoes, add the sliced potatoes in even layers, layer on layer, add a dash of gravy browning to make them a slightly darker colour, pour over the stock. 4. Tasman Peninsula Instameet May 2016

On Sunday 8th May, our group of 60 instagrammers met at 8.15 am at Brooke Street Pier, Hobart for  an action packed instameet. We headed out on the water from Hobart to Port Arthur Historic Site on a big Navigators Catamaran, for a bumpy ride down the Derwent, out and around the Tasman Peninsula and past some of the biggest cliffs in Tasmania, we were also lucky to get the chance to see a pod of Dolphins playfully following our boat. Iron Pot Lighthouse The 'Iron Pot' is Australia's oldest lighthouse. The origins of this lighthouse are steeped in tragedy, with frequent shipwrecks resulting in an outcry from the settlement. The unique square spire is a testament to convict construction, still standing over 150 years later .
