Tomato Slices topped with Cherry Bocconcini

Tasty and light yet and incredibly simple quick and easy dish for a light lunch, side dish or as an appetiser at parties and get-togethers.  They can also be placed on top of thinly sliced french bread stick . Lightly drizzled with a good olive oil or some balsamic vinegar add extra flavour and tang. Ingredients 2-3 medium sized firm tomatoes 200 g tub cherry bocconcini sea salt olive oil chopped basil Method 1.  Wash, dry and slice tomatoes. Arrange on to a flat serving dish. 2.  Top each tomato slice with 2 balls of bocconcini. Drizzle with olive oil or balsamic vinegar. Sprinkle lightly with sea salt. Top with chopped basil. I made these for a quick pool side lunch. Enjoy

#thatpinkdoor Christmas Tree Decoration

Scott made me the Palm Springs pink door for my pink Christmas tree, and it is just perfect!! It is no secret I have a HUGE crush on Palm Springs and anything to do with it. We have been very fortunate to visit there twice, last time Scott and I went on the lookout for the Instagram famous coloured doors, the pink one being the favourite. "That Pink Door" situated in East Sierra Way, Palm Springs has been an Instagram favourite for years now and isn't it gorgeous.  An oversized front door in a stunning bubble gum pink colour, worthy of it's own hashtag! has the appearance of a chocolate bar. As I am putting up a pink tree this year, I thought I would give Scott the task of making a Pink Door ornament to hang on my pink tree. Using his circular saw, he cut the door shape and grooved out the square pattern on the front. He then sanded the edges and gave it a couple of coats of undercoat before spraying it with a couple of coats of pink. Obviously with it being miniature...

Decorating Our First Pink Christmas Tree

I finally got a PINK Christmas tree, and isn't she a beauty.  I bought it on the pre-Christmas sale at Spotlight. There were only two left in the Hobart store and they sold out quickly online. We put it up through the week last week and I "floofed" it out ready to put the lights on and decorate. The lights flash colour between blue and pink. I decorated it with some previous ornaments and some new ones I bought this year. I used an old gift box for a tree collar to which I added some decorations. This tree will definitely be making an appearance every Christmas for a good few years.

Cauliflower & Coconut Soup

A deliciously creamy soup suitable for vegans. Ingredients 1 large head cauliflower 2 cups water 450 ml coconut milk 1 tsp ground turmeric 1/2 tsp salt 1/2 tsp ground ginger 1/2 tsp white pepper Method 1.  Preheat oven to 190°C. Line a baking tray with baking paper. Chop cauliflower into bite sized pieces. Place 1/2 cauliflower onto baking tray, drizzle with olive oil, toss to coat, spread in a single layer. Roast for 20-25 minutes or until golden. 2.  Place remaining cauliflower in a large pan. Add the water, coconut milk, turmeric, ginger, salt & pepper, stir to combine. Bring to a simmer over a medium/high heat. Reduce heat to low/med, cover and simmer until tender, about 20-25 minutes. 3.  Meanwhile, when done, remove cauliflower from oven, add to soup pan, remove from heat and cool slightly. 4.  Using a blender, blend in batches until smooth and creamy. Season to taste. Enjoy
