Slow Cooker Chicken Curry

Margaret ( M-I-L) sent out this packet of Schwartz slow cooker curry packet mix, she had made it herself and really enjoyed it and thought I might like to try it. Our usual curries are spicy but this one was really nice and so easy to make. I think I may have to get her to post out some more 😋😉 I currently don't have a slow cooker as mine gave up the ghost a while back so I have been using my oven for slow cooked dishes. Set the temperature at 100° C and cooked it for 7 hours. Ingredients 1 packet Schwartz slow cooker chicken curry 1 onion, diced 1 red capsicum, cut into chunks 450 potatoes, peeled & cut into chunks 450 g boneless, skinless chicken breast, diced 400 g tin chopped tomatoes 175 g spinach Method 1.  Place onion, capsicum, potatoes and chicken into slow cooker pot. 2.  Mix sachet contents with the chopped tomatoes and stir into the slow cooker pot.  3.  Cover and cook for up to 4 hours on ...

Brioche Hot Dog Bun Banana S'mores

S'mores with a twist. This is a really fun dessert for kids parties, sleepovers or just as a lunch. Brioche hot dog buns filled with chocolate spread and banana with crushed biscuits and marshmallow fluff, quick and easy to make, the kids will love them! Spread each side of the split brioche bun (don't split all the way through) with chocolate spread, roughly break up some biscuits of your choice and scatter them over the chocolate, place a whole banana in the centre then cover with marshmallow fluff, using a confectioners blow torch, brown the marshmallow then crumble some crumbs over the top. You could have all kinds of fun trying different combinations and ingredients, let your imagination run wild 😁

Flu-Fighting Chicken Soup

We have all been down with the flu this past week, it has been very draining and taken a lot out of us, so once I started to feel better I made this soup in the hope to build up our immune systems again. Ingredients 2 litre chicken stock 2 cups shredded cooked chicken 2 carrots, finely chopped 2 sticks celery, finely chopped 1 onion, finely chopped 3 cloves garlic, finely chopped 1 Tsp turmeric powder 1 Tbsp finely grated ginger 1 Tsp garlic powder 1/4 Tsp ceyenne pepper generous pinch sea salt coconut oil Method 1.  Heat coconut oil in a pan over a medium heat. Add carrots, onion and celery, cook until softened. 2.  Add stock and chicken, simmer for 8-10 minutes. Add garlic and spices, simmer for another 3 minutes or so. Season with salt. Serve immediately.

Around Here Lately......

After recovering from the flu, we decided to catch up with a few things around the house and of course celebrating Jodie's birthday. I restyled the kitchen shelving unit. We went out for a meal to the Claremont Hotel for Jodie's birthday. Yesterday we did a spot of Christmas shopping, it wasn't planned but I do like to shop in advance so I am not rushing around at the last minute amongst the crowded masses searching for gifts.

5 Beauty Besties

Jodie and 4 of her best mates went out for lunch yesterday as a birthday celebration. These guys have been friends for years now and are always there for one another, such a great bunch of young ladies. Friends Forever 💜

Jodie's Birthday Tea

  We took Jodie to The Claremont Hotel for her birthday tea, she had steak and chips followed by an ice cream dessert. Both Scott and I had the chicken Bosco, grilled chicken breast with bacon, mushrooms, shallots and prawns in a classic Bosco sauce (creamy garlic and brandy).

Happy 19th Birthday To Our Disney Obsessed Jodie

Yep, always has been and always will be...obsessed with anything Disney. From her room as a little girl completely kitted out with everything Disney Princesses to now with Nightmare before Christmas and Pirates of the Caribbean, Jodie LOVES Disney. Her birthday cake request this year was Mickey Mouse, I thought it would be fun to do a head cake, normally I use fondant icing but this time I went for sprinkles, I was kinda hoping it would be an easier cake to decorate after spending a week floored by the flu I didn't want to try anything elaborate, but sometimes the simplest looking cakes are the more fiddly to do, to say EVERYTHING was covered in sprinkles is an understatement, from the counter tops, floor, even the dining chairs were sprinkle encased 😖 I made 3 cakes, one 20 cm and the other two 10 cm. Once cooled I covered them in buttercream, then sprinkled one half of the 20 cm cake with black sprinkles and the other half with red coloured sprinkles, the two ...
