Weekend

The girls were working on Saturday so after dropping Cerys off for her 2 pm shift Scott & I went for lunch. We tried this new burger place called Billy's Burgers & Bar in Elizabeth Street. It was really good, would definitely go back again. Sunday was a lovely day, we actually got some sunshine 😀 We decided to take a trip up the mountain as we hadn't been up for over 3 years! And lets face it, the views are spectacular. There is now a tour bus that takes people up to the summit, it was actually quite busy up the mountain. It's nice to get out of the house and explore 💓

Triple Layer Lemon Slice

This is an easy to make dessert using ready to make packet ingredients. I came across these in my pantry and decided to combine the two to make one dessert for Sunday dinner. Ingredients 1 box supreme lemon slice mix 80 ml water 3 eggs 2 tbsp lemon juice 50 g butter, melted 2 tsp lemon zest 2 tsp lemon juice 1 packet vanilla dessert mix 400 ml milk 300 ml thickened cream 1/4 cup lemon juice 1.  Follow lemon slice packet directions adding 2 tsp lemon zest and 2 tsp lemon juice to the crust mix. 2.  Follow directions for filling mix, adding 2 tbsp lemon juice to mix before baking. 3.  Bake according to packet directions. Allow to cool, remove from tin. 4.  Follow vanilla dessert mix packet directions adding the milk, cream and 1/4 cup lemon juice. Mix according to packet directions. Refrigerate for 15 minutes before spreading on top of the cooled lemon slice. Return to fridge until ready to serve. ...
