A delicious winter warmer Ingredients 200 g medley mix tomatoes or cherry tomatoes 400 g tin diced tomatoes 500 ml vegetable stock 1 small onion, finely diced 1 Tsp crushed garlic 2 Tsp Turmeric powder 1 Tbsp coconut or olive oil 1 Tbsp apple cider vinegar (optional) 1 Tsp dried basil Method medley mix tomatoes 1. Heat oil in a pan over a medium heat, fry onion for 1 minute, then add the garlic, continue to fry for 1 minute. Cut tomatoes into halves, then add to the pan along with turmeric, cook until tomatoes have softened. 2.  Add the tinned tomatoes, vegetable stock, basil and apple cider vinegar, (why apple cider vinegar?, I like the tang it gives to the soup). Bring to the boil, reduce heat, cover with lid and allow to simmer for 8 - 10 minutes. 3. Puree soup in a blender until smooth, season to taste.
