Creating Our Backyard Palm Springs Oasis

It's no secret I have a huge crush on Palm Springs, I adore everything about it from the dessert weather, palm trees, cacti, to the brightly coloured hotels and shops. We have been fortunate to visit there twice and I so hope that Scott & I can go back again one day.

That was why we wanted to upgrade the pool area to add a cabana in place of the chalet, where we could relax and sit undercover by the pool.

I wanted to create a calming area with a Palm Springs feel to it where we could sit as a family in the summer evenings and weekends enjoying the pool that we had put a huge amount of blood, sweat & tears building. See post here

29th August 2020, we stumbled upon a plant sale just up the back from our house and to my delighted they were selling some cacti, small ones, so much more affordable than large fully grown ones (I am just going to have to be patient!!) which I added to the two cacti I have had for about 8 years, so we made a cacti and succulent garden bed here

These are my ones that I bought years ago, below are the recent ones.

The whole backyard renovation is still a long ongoing process as we can only do things as and when we can and is affordable to do so.

There was plenty of upheaval and mess for a few weeks during the process.

We started by taking the chalet down to construct a cabana here

12th September 2020 Scott painted the walls around the pool white to brighten it up, we also bought a couple of wall art things from Bunnings and painted them a pale green.

We also repainted the water feature the same green as the wall art and added a couple of outdoor pink chairs from Kmart, Darren and Hannah took the blue ones for their garden.

I wanted a bar made from breeze blocks, there are a lot of breeze block walls around homes in Palm Springs, so I thought it would add a nice touch having a bar built with them. 26th September 2020 Scott dug a hole where the bar will sit and filled it with concrete for stability, he then proceeded to build the wall of the bar on 28th and 29th September.

1st October 2020 he made the bar counter top and painted the wall white, and varnished the counter top.

We designed and created a gorgeous Cacti and Flamingo ornamental garden at the entrance of the cabana. (see here )

5th March 2021 Scott spotted these light up Palm trees in Bunnings and just knew for me it would be instant love at first sight.

We bought two and set them up 7th March.

They make a fabulous addition to our Palm Springs atmosphere.

There will be more to come, further updates as we add to our Palm Springs style dream. There have already been some updates see here

Hickory-Honey Ham...Christmas With The Kranks

I got this Christmas movie cookbook during our 2022 holiday to LA see  here  and I still haven't made anything from it, so for our Christmas in July, I thought I would try the Hickory-Honey ham from the movie Christmas with The Kranks. Scenes from the movie where Nora is running towards the last ham in the store, only to be outsmarted by an elderly lady. I managed to get a couple of reduced shoulder hams from woolies back in May so this gave me an excuse to try a recipe from the book. We also got some Hickory smoking chips for the BBQ. It is a ham that has been smoked over Hickory wood chips for several hours, served with a honey gravy, not out of a tin which it is in the movie. Ingredients 8 cups hickory or other hardwood chips 2 large aluminum foil pans 1 (4kg) fully cooked  bone in ham 1/4 cup salted butter 1 shallot, minced 1/3 cup honey 1/4 cup dark brown sugar 1/4 cup apple cider vinegar 1 tbsp balsamic vinegar 1 tbsp wholegrain mustard 1 tsp ground ginger 1/...

Corned Beef Stovies

We love stovies, the perfect comfort food for cold evenings and an ideal way to use up leftover meats. I had some corned beef leftover from Scott's sandwiches so that became the base for these stovies. Ingredients 1-2 tbsp olive oil 1 onion, finely chopped 1 kg potatoes (suitable for mashing) 300ml beef stock 1 beef oxo cube 1 tin corned beef Method 1.  Peel and thinly slice potatoes. 2.  Heat oil in a large deep pan over a medium heat until hot. Add onions and fry until golden. 3.  Add sliced potatoes, beef stock and crumbled oxo cube. Stir to combine ingredients well. Cover with lid, turn heat up to medium-high, bring to a gentle boil. Reduce heat to medium-low, simmer, stirring every few minutes. Cook for 40-50 minutes or until potato is soft and tender. 4.  Using a potato masher, roughly break the potatoes into smallish pieces. Cut corned beef into small chunks. Add to potatoes, season with salt and pepper. Stir until well combined and corned beef has brea...
