I spotted this paper placemat with a recipe for Santa's cookies in Coles and just had to try the recipe.
Ingredients
2 cups (300g) plain flour
1 tsp baking powder
1/2 tsp salt
150g butter, softened
1 cup (225G) brown sugar
2 tsp vanilla extract
1 egg
3/4 cup (135g) chocolate bits
Method
1. Preheat oven to 180°C. Line 2 baking trays with baking paper.
2. Sift flour, baking powder and salt in a large bowl. Use an electric mixer to beat the butter, sugar and vanilla in a bowl until soft and creamy. Add egg and beat until just combined. Add flour mixture and stir to combine. Stir in the chocolate bits and stir to combine.
3. Roll 2-tbsp portions of the mixture into balls and place on the lined trays, allowing room for spreading. Gently press each ball to flatten slightly.
4. Bake the cookies, swapping the trays halfway through cooking, for 15 minutes or until crisp. Set aside on the trays for 5 minutes to cool slightly before transferring to a wire rack to cool completely. Serve warm or at room temperature.
