Cookies For Santa

I spotted this paper placemat with a recipe for Santa's cookies in Coles and just had to try the recipe. Ingredients 2 cups (300g) plain flour 1 tsp baking powder 1/2 tsp salt 150g butter, softened 1 cup (225G) brown sugar 2 tsp vanilla extract 1 egg 3/4 cup (135g) chocolate bits Method 1.  Preheat oven to 180°C. Line 2 baking trays with baking paper. 2.  Sift flour, baking powder and salt in a large bowl. Use an electric mixer to beat the butter, sugar and vanilla in a bowl until soft and creamy. Add egg and beat until just combined. Add flour mixture and stir to combine. Stir in the chocolate bits and stir to combine. 3.  Roll 2-tbsp portions of the mixture into balls and place on the lined trays, allowing room for spreading. Gently press each ball to flatten slightly. 4.  Bake the cookies, swapping the trays halfway through cooking, for 15 minutes or until crisp. Hamish's Last Christmas. 2024

Little did we know that when we took these photo's of Hamish, Christmas 2024, that it would be his last he celebrated with us. It is going to be very strange having one less body with us at Christmas, but we know, his beautiful spirit will be with us every day of every year 💙. He always got gifts in his stocking that he got for his very first Christmas in 2008, my mum bought it for him in Scotland and took it out during their trip here in December 2008, he has had it every year since.
