Classic Home Fries


Not just for breakfast!. Seve them with roast chicken, meat loaf, or a burger. These were definitely on Rose's breakfast menu when Dorothy's friend Jean came to visit the girls and fell hard for Rose, much to Blanche's surprise.


Ingredients

1 tbsp vegetable oil

1 medium yellow onion, diced
into 1/2-inch pieces

1 tbsp butter

1 large baked Russet potato, cut
into 3/4-inch chunks

Fine sea salt and freshly
ground black pepper

Method

1.  Heat the vegetable oil in a large skillet over medium-low heat. Add onion and cook, stirring occasionally, until light golden brown, about 6 minutes. Add the butter and, when it has melted, add the potatoes. Season lightly with salt and pepper and gently stir, occasionally, until the potatoes are browned and crisp on the outside and fluffy on the inside, about 15 minutes. Adjust the heat as you cook so the onion doesn't burn. Go by the sound, you should hear a mild protest coming from the potatoes, not an all out frenzy.

2.  If serving right away, dish out the home fries right from the skillet. If serving later, spread the home fries out on a baking sheet and rewarm in a 450 °F oven, turning once, until heated through and re-crisp, about 5 minutes.

Aussie Pie Floater

With Australia day fast approaching, I had to share this Aussie icon. The pie floater is a meat pie submerged in thick pea soup, the pies are traditionally turned upside down sitting or sometimes submerged in the pea soup. The first time I had ever heard of this was while watching an episode of Billy Connolly's Australian tour. He was doing a show in Adelaide and indulged in one of these south Aussie icons. We tried a similar thing called a tiger pie from Harry's Cafe de Wheels on the Sydney harbour, the Tiger is a meat pie served with scoop of mash a scoop of mushy peas and a scoop of gravy, it was really delicious.  A pie floater put simply is a meat pie on top of or covered in green pea soup with a choice of sauce squirted on top, the usual being ketchup, brown sauce, mint sauce, gravy or bbq sauce, some people also enjoy vinegar over their floater, I suppose the options can be endless, whatever 'floats' your pie!!. Rice Krispie Treats for Cake Sculpting

I saw this idea while watching a baking competition series on TV recently, they used it to sculpt and carve larger lightweight novelty modelling decorations for cakes. Ideal when you are making a large novelty sculpture that you don't want to be heavy or weigh the cake down. Such a clever idea and just what I needed to make the main part of Cerys' recent birthday cake. I did some internet searches and found a few recipes, they were all much the same, involving 2 main ingredients...marshmallows and rice krispies. Some also added melted chocolate and butter but I didn't want to involve too much ingredients, this one called for equal amounts of marshmallow and rice krispies and 1 tsp margarine.
