I was looking for an easy and tasty buttercream frosting to coat Cerys' birthday cake, I came across this one https://savorysweetlife.com/?s=buttercream.
It was easy to make and work with and tasted delicious, I will definitely use this recipe again.

Classic Vanilla Buttercream Frosting

Buttercream Frosting Recipe that is light, creamy, and fluffy. This homemade frosting recipe is the BEST Buttercream frosting recipe for cakes and cupcakes. It’s the perfect buttercream icing for decorative piping. You'll love this EASY classic vanilla buttercream frosting recipe!
Ingredients
  • 1 cup unsalted butter (2 sticks or ½ pound), softened (but not melted!) Ideal texture should be like soft serve ice cream.
  • 3-4 cups confectioners (powdered) sugar, SIFTED
  • ¼ teaspoon table salt
  • 1 tablespoon vanilla extract
  • Up to 4 tablespoons heavy cream, half and half, or milk **heavy cream is best
Instructions
  1. Beat the softened butter for a minutes with a mixer using the paddle attachment on medium speed.
  2. Turn off the mixer and add the 3 cups of sifted powdered sugar and turn your mixer on the lowest speed (so the sugar doesn’t blow everywhere) until the sugar has been incorporated with the butter. The mixture will look clumpy – don’t worry, it’s suppose to!
  3. Increase mixer speed to medium and add the vanilla extract, salt, and 2 tablespoons of cream and beat for 2-3 minutes until it is whipped, fluffy, and creamy in appearance.
  4. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining cream 1 tablespoons at a time.

Aussie Pie Floater

With Australia day fast approaching, I had to share this Aussie icon. The pie floater is a meat pie submerged in thick pea soup, the pies are traditionally turned upside down sitting or sometimes submerged in the pea soup. The first time I had ever heard of this was while watching an episode of Billy Connolly's Australian tour. He was doing a show in Adelaide and indulged in one of these south Aussie icons.
