Zingy Lemon and Green Tea Loaf


Ingredients

3 eggs
1 cup sugar
1 cup buttermilk
140 g butter
2 Tbsp lemon zest
1 Tbsp green tea powder
2 Tbsp lemon juice
1 1/2 Tsp lemon extract
220 g plain flour
2 Tsp baking powder
1/4 Tsp salt

Method

1.  Preheat oven to 180° C. Grease and line a loaf tin.

2.  In a large bowl, add eggs, sugar, buttermilk and butter, whisk until smooth, pale and combined. Add zest, lemon juice and lemon extract and continue whisking until combined.


3.  Sift flour, green tea powder, baking powder and salt into the wet mixture until just combined, don't over mix, some lumps will remain, but that is fine. Pour into loaf tin and bake for 50 - 55 minutes, check with a skewer, if it comes out clean it is ready. Leave in the tin to cool for a few minutes, then turn out onto a cooling rack. Enjoy warm from the oven or cool and drizzle with lemon glaze. Recipe below.

LEMON DRIZZLE GLAZE

Ingredients

2 Tbsp butter, melted
1/2 Tsp lemon zest
1 Cup Icing sugar
1 Tbsp lemon juice.

Stir together butter, peel and sugar in a bowl, add juice a continue stirring until lump free and smooth, drizzle over cooled cake.
