Ingredients 6 lemons 1/2 cup course rock salt 2 cups fresh lemon juice Method 1. Wash and scrub lemons with a scourer in warm water to remove the wax. Dry with kitchen towels. Cut lemons into quarters and place in a non metallic bowl with the salt. 2. Using your fingers, rub the salt into the lemons to release the juices. Fill 2 sterilised jars with lemons, pack in as much as you can, pour lemon juice into the jars making sure lemons are completely covered. Put lids on the jars and close tightly. Place in the fridge for 1 month before using. The peel should now be translucent and soft. To Use.. Remove a piece of lemon from the jar, remove the flesh and discard, rinse the skins well to remove any salt. Finely chop or slice the peel. This can be used to make lemon butter, use in chicken or fish dishes, salad dressings, add to mayonnaise, anything you want to give a citrusy lift to savoury dishes.
