We have always loved oatcakes when we have stovies for dinner, but they are quite difficult to get here so I thought I'd give making them a go myself.
There are various recipes/methods for oatcakes on the net. I came across this one and decided to give it a go, they turned out really nicely but I want to try other recipes to see which ones I prefer.
They were really easy to make, this recipe included flour which was intriguing as I have never heard of that but it worked well.
Ingredients
85 g margarine or butter
115 g plain flour
1/2 tsp salt
1 tsp baking powder
225 g oatmeal
cold water
Method
1. Preheat oven to 190°C. Line a baking tray with baking paper.
2. In a large bowl combine rub margarine into flour until combined. Add the salt, baking powder and then the oatmeal. Add enough cold water to bind the dough, but not enough to make it sticky. Knead dough into a ball.
3. Turn dough out onto a floured surface and roll as thinly as possible. Cut out circles using a cookie cutter. Place on baking tray. Bake for 20-25 minutes.
