Oatcakes


We have always loved oatcakes when we have stovies for dinner, but they are quite difficult to get here so I thought I'd give making them a go myself.


There are various recipes/methods for oatcakes on the net. I came across this one and decided to give it a go, they turned out really nicely but I want to try other recipes to see which ones I prefer.


They were really easy to make, this recipe included flour which was intriguing as I have never heard of that but it worked well.


Ingredients

85 g margarine or butter
115 g plain flour
1/2 tsp salt
1 tsp baking powder
225 g oatmeal
cold water

Method

1.  Preheat oven to 190°C. Line a baking tray with baking paper.

2.  In a large bowl combine rub margarine into flour until combined. Add the salt, baking powder and then the oatmeal. Add enough cold water to bind the dough, but not enough to make it sticky. Knead dough into a ball.

3.  Turn dough out onto a floured surface and roll as thinly as possible. Cut out circles using a cookie cutter. Place on baking tray. Bake for 20-25 minutes.

Aussie Pie Floater

With Australia day fast approaching, I had to share this Aussie icon. The pie floater is a meat pie submerged in thick pea soup, the pies are traditionally turned upside down sitting or sometimes submerged in the pea soup. The first time I had ever heard of this was while watching an episode of Billy Connolly's Australian tour. He was doing a show in Adelaide and indulged in one of these south Aussie icons. How cute are these guys!!, super easy to make and perfect for kiddies Christmas parties. I didn't bother weighing and measuring the ingredients, just go with how much you plan to make, it's that simple.
